Amaretto French Toast with Berry Compote
The first time I tried Amaretto was with my friend Caterina in Milan 2 years ago and I immediately became obsessed. I love it’s flavor and one day I thought to use it as substitute to vanilla extract in French Toast and now I don’t make them any other way!
This french toast is soooo good on it’s on that I have never added syrup! If you have a few minutes to spare, make this quick berry compote or top it off with some fresh fruit!
~FRENCH TOAST~ Serves 2
INGREDIENTS
— 1/2 Brioche bread loaf, cut into 1.5 inch thick pieces
— 2 eggs, whisked
— 1 TB Amaretto (I use Disaronno)
— 1/2 Cup Heavy Cream (Regular milk is okay too!)
— 1 TB brown sugar, plus extra for sprinkling
— Pinch of Salt
— 2 TB unsalted butter, (1 TB melted)
LET’S COOK
Preheat oven to 375 degrees.
Slice brioche bread into 1.5 inch thick pieces and set aside.
Whisk the eggs together and add the amaretto, heavy cream, brown sugar,1 TB of melted butter, and a pinch of salt. Mix until it’s well incorporated.
Dip the bread into the egg mixture— be sure to cover all sides and remove any excess. Sprinkle one side with brown sugar and set aside.
On medium- high, heat 1 TB of butter in an oven safe pan. Place the sugared side on the pan and cook until lightly browned, about 3 minutes. Sprinkle the other side with sugar, flip, and cook for another 3 minutes. Add more butter if necessary to prevent sticking! (Butter makes everything taste even better!)
Place the pan into the oven and cook each side for 3 minutes. (You’re looking for a beautifully caramelized pieces of french toast but be sure not to burn it!)
Top with a berry compote or homemade whipped cream!
~BERRY COMPOTE~ Serves 2
INGREDIENTS
— 1 1/4 cup of mixed berries (I used strawberries, blueberries, and blackberries)
— 1/4 cup of water
— 1 TB Butter
— 1 TB Brown Sugar
— 1 TSP of Amaretto or Vanilla Extract
LET’S COOK
On medium low , melt butter in a medium saucepan.
Mix in fruits, water, amaretto or vanilla extract, and sugar. Stir until all the fruit is covered with butter.
Reduce temperature to low, simmer until fruits are softened and liquid has thickened. Be sure to stir frequently! This should take about 10-15 minutes.
